"Guariroba" is a species of palm tree in the botanical genus "Syagrus", which can be found over a large part of eastern Brazil and northeastern Bolivia and Paraguay. Also known as "Palmito-Amargoso". The guariroba palm, considered by many people as a bitter-tasting vegetable (compared to the sweet palm hearts), is a culinary delicacy of great importance in some states, including some regions of "Goiás and Minas Gerais".
In recipes for the "Empadão Goiano" dish, for example it is essential to include large pieces of the bitter "Guariroba" palm heart. It can also be used as a salad: with cherry tomatoes and plenty of seasoning.
