Polvilho Azedo is the fermented cassava pulp that is processed into starch. This starch is slightly acidic, strongly aromatic and more commonly used in savoury recipes such as pão de queijo (cheese breads) for its distinctive slightly rubbery texture. It is gluten-free and can be used in combination with other flours to make a gluten-free baking mix.
