Sagu is a dessert that originated in the Serra Gaúcha (highlands) in the Brazilian state of Rio Grande do Sul and is very popular throughout the southern region of the country. It is made with cooked cassava starch balls. In the most popular preparation method, the sago pearls are cooked in red wine. However, milk or various fruit juices can also be used. Simple in preparation, sagu is usually accompanied by custard.
