This Buttery Sheep’s Cheese from Seia is a traditional Portuguese cured cheese made from raw sheep’s milk, using cardoon and rennet for natural coagulation. It is a semi-soft, buttery cheese with a smooth, creamy texture and a pale white to slightly yellow interior, with few or no holes.
Produced in the Serra da Estrela region, this cheese reflects centuries of artisanal Portuguese cheesemaking. Its flavor and texture naturally evolve over time, becoming firmer and more intense as it matures.
Awarded Silver at the World Cheese Awards 2023/24, this cheese stands out for its distinctive character and refined sensory profile.
